After spending three years studying architecture and urban planning at Dalhousie University and working part-time in an East Coast kitchen, Kyle could no longer ignore his passion for food. He packed everything up and moved back to Toronto, where he completed his training at George Brown College and his Red Seal certification. After 10 years in the industry, he has no regrets. Kyle's food philosophy is simple. Local, seasonal, and fresh ingredients combine to make the best of both worlds: complex yet accessible foods. Anything worth making is worth making from scratch, and experimentation with flavour and texture is his favourite part of being in the kitchen.
Jan has been involved in the F&B world since the tender age of 19. Beginning as a bartender for the opening team of Steamworks Brewing in the newly refurbished Village at Park Royal he has worked his way diligently upwards. He has worked the wood and stumbled into management at the Boathouse Restaurant in Horseshoe Bay, spent time in the big smoke for the Donnelly group, both at Smiley’s (Butcher & Bullock) and Library Square then heading north up the Sea to Sky to take over the Bar Management position at the famous Nita Lake Lodge. We are pleased to have been able to partner up with Jan as our Restaurant Manager. He has delivered a decidedly patriotic vision to our Beverage Program, featuring a strong craft draft program along with BC wines and Spirits.
